Non-Dairy Peppermint Cocoa Mix

3 (4 1/2-inch) peppermint sticks
1 cup powdered sugar
1 cup powdered non-dairy creamer
3/4 cup unsweetened cocoa
Crush peppermint stick with a small amount of the powdered sugar in a food processor or blender.

Combine the crushed peppermint with remaining sugar, creamer and cocoa, mixing well.

To serve add 1/4 cup mix to 3/4 cup boiling water per serving. Store remaining mix in a jar or airtight bag.

Makes 8 servings.
