Greek Roast

4 lb 7 Cut Roast (or whatever kind you like)
2 Stalks celery
1 Large onion - finely chopped
1 Tomato
1½ Cups water
3 TBSP. cornstarch
? Carrots
? Potatoes

Put water in large covered casserole dish.

Slice celery long way and put in dish.

Put onion on top of celery.

Salt and pepper both sides of roast. Don't flour roast.

Put roast on top of vegetables.

Cover and bake 4 hours at 350°.

Remove meat and vegetables.

Add cornstarch to gravy to thicken.
